I can’t save files anywhere but in the Documents (or Desktop) folder.

Mac OS X 10.5 Leopard tries to make the “Save” dialog easier by hiding options. We think this just confuses a lot of users. Click the downward-pointing blue triangle next to the file name to show the familiar layout.
